Cabbage Soup

I remember the first time I had cabbage soup. I was maybe 10 years old, and my mom made it for dinner one night. I thought it sounded gross – why would anyone want to eat something called “cabbage soup”? But she assured me that it was delicious, and I decided to give it a try.

I’m so glad I did! The soup was flavorful and hearty, and the cabbage added a nice crunch. Ever since then, cabbage soup has been one of my favorite dishes. And this recipe is my absolute favorite way to make it.

Cabbage Soup

Ingredients

  • 1/2 teaspoon coriander seeds (or 1/4 teaspoon ground coriander)
  • 1/2 teaspoon fennel seeds (or 1/4 teaspoon ground fennel)
  • 1/4 teaspoon cumin seeds (or 1/8 teaspoon ground cumin)
  • 2 teaspoons extra virgin olive oil
  • 1teaspoon butter
  • 1 medium onion, chopped (about 1 1/4 cups)
  • 1 small or 1/2 large green cabbage, sliced 1/4-inch (4 to 5 cups)
  • 1 can whole peeled tomatoes
  • chicken stock as needed
  • salt and pepper to taste

Instructions

  • If using whole spices, grind them in a mortar and pestle or spice grinder until well ground.
  • Heat olive oil and butter in a 4-quart pot on medium heat. Add chopped onion and ground spices. Cook until onions have softened, about 5 minutes.
  • Add sliced cabbage to the pot and stir to mix with onions. If using unsalted stock, sprinkle cabbage with 1/2 teaspoon of salt.
  • Add canned whole tomatoes with their juices to the pot. Stir to combine.
  • Add chicken stock to the pot and bring to a simmer. Taste for salt and add more if needed. Lower heat and cover pot. Let simmer for 20-25 minutes or until cabbage is thoroughly cooked, breaking up any tomatoes that are still whole. Sprinkle with freshly ground black pepper to serve.
