- 1 medium onion, chopped (about 1 1/4 cups)
- 1 small or 1/2 large green cabbage, sliced 1/4-inch (4 to 5 cups)
- 1 can whole peeled tomatoes
- chicken stock as needed
- salt and pepper to taste
- If using whole spices, grind them in a mortar and pestle or spice grinder until well ground.
- Heat olive oil and butter in a 4-quart pot on medium heat. Add chopped onion and ground spices. Cook until onions have softened, about 5 minutes.
- Add sliced cabbage to the pot and stir to mix with onions. If using unsalted stock, sprinkle cabbage with 1/2 teaspoon of salt.
- Add canned whole tomatoes with their juices to the pot. Stir to combine.
- Add chicken stock to the pot and bring to a simmer. Taste for salt and add more if needed. Lower heat and cover pot. Let simmer for 20-25 minutes or until cabbage is thoroughly cooked, breaking up any tomatoes that are still whole. Sprinkle with freshly ground black pepper to serve.
