Chicken Fried Rice
This dish is so easy to make and always comes out delicious! I love chicken fried rice and it’s one of my go-to recipes when I’m short on time or need to whip up a quick meal. Plus, it’s pretty budget-friendly too, which is always a bonus.

Ingredients
- 3/4 pound boneless skinless chicken thighs, 1 teaspoon salt, 3 tablespoons canola oil, 3 large eggs, 2/3 cup yellow onions, 2 cloves garlic, 2 teaspoons minced ginger, 1 large carrot peeled and diced, 2/3 cup frozen peas rinsed under warm tap water for a few seconds to thaw., 4 cups cooked jasmine rice preferably leftover from at least a day before (see Recipe Note), 2 scallions sliced (separate the white and light green parts from the dark green part), 1/2 teaspoon Chinese five-spice powder optional
Instructions
- Chop the chicken into small cubes and season with salt.
- Whisk eggs and scramble in a separate pan. Set aside.
- Cook chicken in a wok or large sauté pan over medium high heat until cooked through. Set aside.
- In the same pan, cook onions, garlic, ginger, carrots, peas, and scallions (save dark green parts). Season with salt and five spice powder.
- Stir in rice and smash any large chunks. Stir in soy sauce and sesame oil.
- Add scrambled eggs, chicken, and dark green scallion parts back into the pan. Cook for 1 to 2 minutes more.
