This beef stew is one of my all-time favorite winter recipes. It’s hearty, filling, and so easy to make. Plus, it’s the perfect comfort food for a cold night. I always make a big batch so we have leftovers for the week.
Easy Beef Stew

- well-marbled beef chuck stew meat, cut into 1-inch pieces
- celery, cut into 1-inch pieces (about 2 cups)
- onion, chopped (about 1 cup)
- carrots, peeled and cut into 1-inch pieces (about 2 cups)
- parsnips, peeled and cut into 1-inch pieces (about 1 cup)
- freshly ground black pepper
- finely chopped fresh thyme leaves
- all-purpose flour beef broth (see recipe note) water balsamic vinegar Worcestershire sauce russet potatoes, peeled ,cut into1 – inchpieces( about 3 cups )chopped fresh parsley leaves
- Preheat oven to 375 degrees F (190 degrees C).
- In a large bowl, combine well-marbled beef chuck stew meat, celery, onion, carrots, parsnips, freshly ground black pepper, and finely chopped fresh thyme leaves. Toss to coat evenly with all-purpose flour.
- Spread the mixture in a single layer on a baking sheet and roast for 45 minutes, or until the vegetables are beginning to brown and the beef is cooked through.
- In a large pot over medium heat, bring beef broth and water to a boil. Add balsamic vinegar and Worcestershire sauce and simmer for 10 minutes.
- Add the roasted beef and vegetables and russet potatoes to the pot of broth and cook for an additional 30 minutes until the potatoes are tender when pierced with a fork.
