This is one of my all-time favorite chicken recipes. The lemon pepper seasoning gives the chicken a delicious flavor and the cooking method keeps it nice and juicy.

Ingredients
- 1 1/2 to 1 3/4 pounds boneless, skinless chicken breasts (about 2 large chicken breasts)
- 1 1/2 tablespoons lemon pepper seasoning, divided
- 3/4 cup all-purpose flour
- 1 1/2 tablespoons vegetable oil
- 4 tablespoons unsalted butter, divided
- 2 cloves garlic, minced or grated
- 1/2 cup chicken stock
- 1/3 cup freshly squeezed lemon juice (from 2 lemons)
- 1/4 cup Italian parsley, chopped
- Lemon slices, for garnish (optional)
Instructions
- Preheat oven to 425 degrees F (220 degrees C).
- Place chicken breasts in a baking dish and sprinkle with 1 tablespoon of lemon pepper seasoning.
- In a shallow bowl, combine flour and remaining lemon pepper seasoning. Dredge chicken in the flour mixture until coated and set aside.
- Heat oil in a large skillet over medium-high heat until hot but not smoking. Add chicken to the skillet and cook for about 2 minutes per side, or until golden browned. Remove chicken from the skillet and set aside on a plate lined with paper towels to drain any excess oil.
