I grew up eating shrimp fried rice. It was one of my favorite dishes growing up, and I still love it to this day. My mom would make it for us at least once a week, and sometimes we would even have it for breakfast.

It’s a pretty simple dish to make, but it’s so full of flavor. And the best part is that you can really customize it to your liking. You can add whatever vegetables you want, or even change up the protein if you’re not a fan of shrimp.

But in my opinion, nothing beats good old fashioned shrimp fried rice.

Shrimp Fried Rice

Ingredients

  • 8 ounces small raw shrimp, shelled and deveined
  • 1/2 teaspoon kosher salt
  • Freshly ground black pepper
  • 1/2 teaspoon cornstarch
  • 3 tablespoons peanut oil, canola oil, or rice bran oil
  • 3 large eggs, beaten
  • 2 green onions, minced
  • ‘4 cups leftover rice, grains separated well’ 3/4 cup frozen peas and carrots, defrosted -1 tablespoon soy sauce (use gluten free soy sauce if you are making a gluten free version), plus more to taste -1 teaspoon dark toasted sesame oil

Instructions

  • In a medium bowl, combine the shrimp, salt, pepper, and cornstarch. Toss to coat evenly and set aside.
  • Heat a wok or large skillet over high heat until hot enough to evaporate a drop of water upon contact. Add the oil and swirl to coat the bottom of the pan. Add the eggs and scramble quickly until just set.
  • Add the green onions and rice and toss to combine well, breaking up any clumps of rice with your spoon or spatula as you go. Stir fry for 2-3 minutes until everything is evenly distributed and starting to get crispy around the edges.
  • Add the peas & carrots along with the soy sauce and sesame oil, continue stir frying for 1-2 minutes until everything is heated through (but still crisp). Season to taste with additional soy sauce/salt/pepper as needed – I usually add another good pinch or two of salt at this point because it really brings out all of the flavors nicely without being overly salty.*.
  • Serve immediately in bowls while nice & hot! Enjoy as is or top with some chopped scallions, sriracha chili sauce, grilled peanuts…whatever sounds good!.
