  • Sigeumchi Namul:
  • 2 large bunches spinach, rinsed
  • 3 cloves garlic, finely chopped
  • 3 scallions, thinly sliced
  • 1 tablespoon toasted sesame seeds
  • 2 tablespoons toasted sesame oil
  • 2 teaspoons sugar
  • 1/2 teaspoon kosher salt


  • In a large pot of boiling water, blanch the spinach for 1 minute. Drain and transfer to a bowl of ice water to stop the cooking process.
  • Squeeze out excess moisture from the spinach and roughly chop.
  • In a large bowl, mix together the chopped spinach, garlic, scallions, sesame seeds, sesame oil, sugar, and salt.
  • Serve at room temperature or chilled.
